With Chef Fores early training in New York and her exposure to Italy and the culinary experience there, it is clearly apparent that Italian flavours and seasoning rule in most of her dishes. Firstly, you will be surprised by the small spread but as we discovered, it was not the quantity but rather the quality of ingredients that surprised us. But please allow me to qualify - it’s not a typical restaurant serving an abundant selection of foods piled in rows. Alta is helmed by Filipino Margarita Fores (named 2016 Asia’s Best female chef), serving some of the best breakfast fare in all my trips to Manila thus far. The hotel was excellent but the Alta surprised me and my colleagues with its amazing breakfast spread and that was the only meal we had at the restaurant. However, in my recent trip, I discovered Alta restaurant when I stayed at the Ascott, BGC. My assessment of breakfast at various hotels was either neutral bordering on passable or just touching borderline quality. I have been travelling to Manila for the past year and having stayed in various hotels, I had the fortune to sample the first meal of the day.
